I called Apple Support and the very sharp Apple support guy explained to me that many of the hardware settings are stored in a thing called "parameter RAM" (PRAM) and on Sleep mode means you can pick up your laptop and use it much more quickly, which could actually save you battery power over sitting through a long boot process several times

Both have caused me way too many problems, and have even caused me to have to do a restore. These tasks include things like checking to see if your hard drive needs defragmenting, running system diagnostics, checking for disk volume errors, and more. If the machine did sleep, I'd have to do five or six power cycles and sometimes go into Safe Mode to get a working computer. I'm not talking about going through bootcamp, parallels, VM or anything else.
